“Summer Veggie & Pesto Pizza”
I’m looking for different ways to utilize all this summer squash I’m getting from from my CSA, & I was inspired by a “Zucchini Pizza” I saw in Vegetarian Times!
My version starts with leftover Lemon Basil Almond Pesto, then topped thin layers of summer squash, chopped kalamata olives, shredded Follow Your Heart Vegan Mozzarella, heirloom tomatoes & julienned fresh basil on a thin whole wheat crust. So super yummy!!!!!
