Vegan Banh Mi
3 cups arugula
1/2 sliced bell pepper
1/2 cucumber, sliced
1/2 cup steamed broccoli
1/2 cup diced carrots
1/2 cup rice vinegar
1/2 teaspoon salt
1 teaspoon agave
1/3 cup thickly sliced red onion
1 diced jalapeno pepper
tablespoon lime juice
1 tablespoon chopped fresh ginger
2 teaspoons chopped garlic
1/2 teaspoon Chinese five-spice powder
About 4 tsp. Asian chili paste
3 cups sliced tofu
4 small baguettes
Handful Sliced Red Grapes
1/4 cup minced cilantro leaves
Vegan Mayo
In a bowl toss the veggies with the vinegar, agave and salt. Combine the rest of the seasoning with the onion, peppers, and lime juice- marinade the tofu an hour then fry in olive oil. Drain.
Slice the baguettes, slather with mayo, add the cilantro, grapes and tofu. Pile on the veggies and serve. Serves 4.
