Chickpea & Broccoli Coconut Curry with Basmati rice
Today the kitchen went on a trip to India. I’ve wanted to do this recipe for quite some time now, and the day is so beautiful today, I just went for a colorful dish to match it.
- 100g basmati rice
- 150g canned chickpeas
- 1 head of broccoli
- 2 tomatoes
- 1 tbsp of ginger
- 2 tbsp thai curry powder
- 1 tbsp turmeric
- 2 tbsp olive oil
- 2 tbsp creamy coconut milk
- cilantro to taste
- juice of 1/4 lime
